NOURISH … crispy wild blueberry protein bites

Many days I travel to school pickup with these in tow. The kids are always hungry right after school and these bites are packed with protein, omega 3’s, and fiber. They also make a very quick breakfast if I remember to mix some up the night before. This is also a simple recipe for the kids to help with.  We used dried wild blueberries from Maine for these but other dried fruits would also work. The size of wild dried blueberries are perfect for these bites and, of course, quite yummy. I also like to use this brand of rice cereal with minimal ingredients. These can certainly be made sans rice cereal if you want to add more ground flax and maybe a little almond flour. You may also remember this orange spiced energy bite that I shared in the past, which is also a favorite of ours. Enjoy!!

Crispy Wild Blueberry Protein Bites

Ingredients
  1. 3/4 c. almond butter (or peanut butter)
  2. 1 t. coconut oil
  3. 3 T. raw honey
  4. 3 T. ground flax seed
  5. 1 T. ground chia seed
  6. 1/2 t. orange extract
  7. 1 c. crispy rice cereal
  8. 1/2 c. dried wild blueberries
Instructions
  1. Mix all ingredients together except for the the rice cereal and dried blueberries. When well blended stir in the rice cereal and dried blueberries. Form into desired sized round bites.
  2. Store bites in an airtight container for 5-7 days (though ours never last this long before being devoured).
  3. makes approx. 25 - 1" bites or 16-18 1-1/2" bites.
